Welcome NOURI: The Official Mascot of IUFoST 2026!

The IUFoST World Congress on Food Science and Technology has already announced the first winner of its mascot design competition. His name is NOURI, a young scientist inspired by the traditional dragon of Hong Kong, representing the vision of the IUFoST 2026 World Food Congress, where food science meets the future. From now on, NOURI will accompany us in all our communications. Welcome, NOURI!

Meet the New Fellows 2026 at the Congress

The International Union of Food Science and Technology (IUFoST) is pleased to continue introducing the new Fellows elected to the International Academy of Food Science and Technology (IAFoST) in this issue. The new Fellows will be formally inducted during the 23rd IUFoST World Food Congress, to be held in Hong Kong in October 2026.

Celebrating the Young Scientist Award Winners

The Young Scientist Award recognizes outstanding young scientists for their scientific excellence, innovation, and contribution to food science and technology.

The award winners will present their research through oral presentations at the 23rd IUFoST World Food Congress in Hong Kong, where they will have the opportunity to share their work with the global food science and technology community.

IUFoST Perspectives at CAC49

In the Conference Room Document (CRD) presented at the 90th Session of the Executive Committee (CCEXEC90), the International Union of Food Science and Technology (IUFoST) focused on recent developments regarding nutrient profiling using terminology associated with ultra-processed foods. Concern was expressed about emerging guidance on front-of-pack warning labels that departs from existing Codex guidance on nutrient profiling and front-of-pack labelling.

IUFoST also addressed New Food Sources and Production Systems (NFPS). IUFoST reiterates its support for food innovation while emphasizing that attempts to develop generic risk analysis principles specifically for novel foods are unlikely to be practical unless clearly scoped to defined technologies. Existing Codex risk analysis frameworks remain scientifically robust, and future work should focus on technology-specific guidance rather than broad new principles, thereby enabling rather than inadvertently hindering innovation.
