APPLYING FOOD SCIENCE TO AN UNDERSTANDING OF COVID-19 HUMAN DEFENSE FUNCTIONS – SCIENTIFIC ROUNDTABLE DISCUSSION (SRD)

Coronavirus Disease 2019 (COVID-19) is pandemic and is caused by severe acute respiratory syndrome coronavirus 2 (SARS- CoV-2).  The rising number of cases of this highly transmissible infection has prompted an urgent need to identify and develop effective antiviral interventions that may reduce the health risks associated with this disease.  Increased awareness of food science and dietary components may represent important and critical roles in reducing the risk of SARS-CoV-2 viral infection, growth, and disease progression as well as provide a perspective on the potential use of these plant-derived substances in the development of novel interventions against SARS-CoV-2. This SRD, organised and hosted by the Academy Executive Council features the following presenters:
Narain Naidu (President/CEO Nterminus, California); Chin-Kun Wang (Chung Shan Medical University, Taichung); Fereidoon Shahidi, (Memorial University, Newfoundland); Mark Shamtsyan (Saint Petersburg University of Technology), and Kenji Sato (University of Kyoto). This SRD will be held on Wednesday, March 16  2022 from 08.00 – 09.30 (Toronto/New York), 14.00 (Paris), 16.00 (Nairobi) 22.00 (Seoul). Register here: https://us06web.zoom.us/webinar/register/WN_mljk2ObPQNaUOCkOERafug

IUFoST WELCOMES DR. PETER GLUCKMAN TO THE 21st WORLD CONGRESS OF FOOD SCIENCE AND TECHNOLOGY IN SINGAPORE

IUFoST is honoured that Dr. Peter Gluckman, New Zealand’s former chief science advisor and new President of the International Science Council has accepted our invitation to participate in the World Congress. He will speak to delegates on challenges and opportunities facing global science during the congress week. More details will follow.

CELEBRATING PULSES, THEIR HISTORY AND FUTURE FOR GOOD HEALTH

IUFoST’s latest blog for the ISC looks at Pulses, their traditional uses, and new consumers as their many advantages both for the environment and for a healthy diet are presented.  Most of the pulses have been multifunctional over many centuries.  Traditionally, they have assisted in enriching the soil while serving as nutritious food in the diet and with parts used as animal fodder. The application of adaptable technologies for primary processing, and other innovations have helped to make them more accessible globally. The message of their nutritional value in a healthy diet for providing quality protein, minerals, and fibre together with their important role in modulating gut health and microbiota is spreading fast.  On the occasion of World Pulses Day, Dr. V. Prakash has talked about these aspects  in the blog: https://council.science/current/blog/world-pulses-day-2022/
