This module will provide an overview of the quality attributes in foods. By the end of the module, participants should be able to: a) Give a simple definition of quality. b) Explain the importance of quality for a food product. c) Describe the physical quality characteristics of a food product. d) Describe the chemical, nutritional and microbial quality characteristics of a food product.
