Emerging topics in Food Microbiology - Obadina - 05-18-2023

Food Microbiology is the scientific study of microorganisms used in food production, responsible for food spoilage and disease causing as a result of consumption of microbial contaminated food. Now, many microorganisms previously unrecognized as food borne or harmful are emerging as human pathogens transmitted by food.

I believe biofilms are a very important topic and should be part of any curriculum or teaching materials related to food microbiology. Biofilms in food processing and storage environments can pose significant challenges for the food industry.
