CODEX Regional Consultation and IUFoST Events in Kenya
IUFoST was invited to participate in a series of meetings held in Nairobi, Kenya in conjunction with the 22nd Session of FAO/WHO Regional CODEX Coordinating Committee for Africa (CCAFRICA) from January 16-20.
Food Safety Symposium
Dr. George Ooko Abong’, Food Science and Technology Platform of Kenya (FoSTeP-K, IUFoST adhering body), chaired a one-day Food Safety Symposium on January 19, organized by FoSTeP-K with support from IUFoST. IUFoST African Adhering Body members from Zambia, Tanzania, Burkina Faso, Ghana, Nigeria, Ethiopia, Uganda and Senegal participated.
Interactive sessions included the Current Food Safety Scenario in Kenya and Uganda (Prof. Archileo Kaaya); Misconceptions and Misinformation on Food Additives, with special emphasis on salt (Dr. Donald Mercer); Food Safety Concerns of GMOs, Prof. T. Mutui of National Biosafety Authority of Kenya; European Labeling Approaches to Promote Consumer Education and Selection of Packaged Foods, Dr. Pamela Byrne (Chief Executive Officer, Food Safety Authority of Ireland (FSAI); and Contribution of African Higher Education to Food Safety, Prof. Anakalo Shitandi, Kisii University, Kenya. Group discussions centred on the major issues facing Africa and steps to be taken to improve food safety in the continent through application of food science and technology. An additional session featured a number of topics in the area of Food Science and the Global Food Safety Curricula Initiative (GFSCI).
Science-based Food Regulations Presentation
IUFoST also was one of three organisations invited by CCAFRICA to speak to the delegates and presented on the topic of the Science-based Food Regulations. The role of food science professional bodies in standards development was presented by the Hon. Prof. Ruth Oniang’o, IAFoST President, and Prof. Kiiyukia Ciira, Mt. Kenya University, spoke about the importance of science in food standards and regulation development. Dr. Gerald Moy, IAFoST Fellow and co-chair of the IUFoST Aflatoxin Working Group, gave a presentation on how food businesses can be shaped through CODEX standards, while Dr. Pamela Byrne (FSAI) presented on the science of risk assessment and risk communication. A discussion on achievable outcomes concluded the session, which was attended by more than 100 delegates from 22 African countries.
Recognition of Food Science and Technology Programmes
Congratulations to the Faculty of Food Engineering (FEA), University of Campinas, Brazil, on the recent IUFoST recognition of its B.Sc. Food Engineering degree. The programme, facilities and reputation of FEA have been determined by the IUFoST Education Committee to be of the highest level, the opportunities for students are globally competitive and the FEA provides an outstanding example of leadership, scientific expertise and teaching ability.
IUFoST has significant expertise in responding to requests for assistance in relation to food science and technology curricula. It collaborated with scientists from many fields from around the world to develop this approval process for food science and technology curricula, which is already established and growing as institutions apply for international recognition of their programmes and facilities through IUFoST.
Institutions receiving the IUFoST Food Science and Technology programme recognition meet stringent outcome-based requirements. IUFoST reviews teaching programmes and related facilities and the process includes a site visit as a basic requirement for programme approval. IUFoST Resolution on Aflatoxins
Though great efforts have been made to reduce aflatoxin contamination at the primary production level, inadequate attention has been given to post-farmgate technologies to reduce aflatoxin contamination. Consequently millions of people in Africa and Asia are still exposed to high levels of aflatoxins in their diet. Recently the International Agency for Cancer has evaluated two food processing technologies to reduce aflatoxin levels in food and have concluded that both are ready for wide scale implementation, namely nixtamalization and visual/manual sorting.
The IUFoST Aflatoxin Working Group, as a first step, is advocating the adoption of visual/manual sorting technology with a project prospectus developed that makes use of departments of food science and technology in African universities. In support of this and other initiatives, endorsement of the IUFoST Resolution on Aflatoxins is requested.

April 18-21 – 8th International Food Safety Forum, co-organised by Chinese Institute of Food Science and Technology (CIFST) and IUFoST under the auspices of China Food and Drug Administration (CFDA), National Health and Family Planning Commission of the People’s Republic of China (NHFPC) and other Chinese governmental and international organisations. The Forum is considered as the highest level meeting on food safety in China ‘due to its outstanding achievements and great influences’, CIFST reports. The workshops and Forum will be held from April 18 – 21, 2017 at the Friendship Hotel, Beijing, China.
