Religious, ethnic or ideologically-driven requirements for the production of food are nothing new; however, the last few years have seen significant global growth in the market segments affected. Organic products, vegetarian products, kosher and halal certified foods have shown the most significant gains. Numerous scientific and practical issues appear in the development and production of appropriate foods that can be meaningfully discussed at an international level. Religious aspects in food will be the initial focus where scientific background can be provided.
During the next IUFoST Congress in Mumbai, India, there will be a session introducing Indian eating habits and food production. Future issues will include vegetarian and vegan foods and ethnic nutrition.
